Bake boneless skinless chicken breasts in oven until cooked (I seasoned the chicken with salt and garlic powder Let chicken cool and pull apart shredding the chicken Put the shredded chicken in the bottom of a casserole dish or deep baking pan Sautée onions and peppers if you like Place onions and peppers on top of shredded chicken Cover in enchilada sauce Place cheddar cheese across top and bake at 375 until cheese is melted *about 5-8 minutes*
I added a cream cheese greek yogurt blend to this recipe as well and this was delicious!!!
